The Wines

Rare and Vintage Wines from all over the world are our specialty.  We offer the opportunity to try some of the worlds greatest, oldest and rarest wines in the company of passionate like minded individuals. The wines are procured from right across the globe with a great emphasis on provenance and condition.  Many of the wines we offer in our dinners may never be offered again due to their rarity.  To put it quite simply, supplies of these grand old wines are running out and demand is ever increasing. All our wines are procured from cold cellars or professional temperature controlled storage.  We store all our wines in temperature/humidity controlled storage on site in Australia prior to consumption.  While we can never guarantee the contents of any bottle we go to great lengths to ensure every bottle presents in the very best possible condition. All our wines are handled with the utmost care and respect.

To do this our wines are stored in an upright position for at least 1 week prior to delivery to the restaurant venue.  Wines are usually delivered 3 days before the dinner and stored at the restaurant in an upright position in a locked temperate controlled wine storage area with strict instructions not to move them prior to the eve of the dinner.  On the eve of each dinner the wines are handled only by Rare Wine Dinners. Late in the afternoon the red wines are moved to the dining room and placed into position for the night ahead. This minimises wine shock, unsettling of sediment & accidental damage. Sparkling and White wines are removed at the appropriate time to maintain temperature and decanted(if need be) before being served at the correct temperature. Many of these wines have been lovingly cared for by their original owners for over half a century and we believe they deserve the same love and respect so we handle these rare treasures with the utmost respect and care.  We are fastidious in every detail with the wines and this shows in every single wine that we serve.

Wine types previously tasted include older vintages of Bordeaux, Burgundy, Barolo, Riesling, Vouvray, Shiraz, Cabernet, Champagne, Sauternes, Fortifieds, Trockenbeerenauslese and Beerenauslese.  Famous and legendary wines tasted in the past & planned for future dinners include: Penfold’s Grange, Chateau Lafleur, Joh Jos Prum, C Marey & Liger Belair, Giacomo Bourgogno, Chateau Petrus,  Enrico Serafino, Dom Perignon, Krug, Giaconda, Yquem, Langwerth Von Simmern, DRC, Lindemans, Chateau Margaux, Chateau Lafite Rothschild and Chateau Latour a Pomerol but to name a few.
